Mango and Papaya

This is one of my oldest flavors.  I honestly do not remember the inspiration for this flavor.  What I do know is it has an amazing flavor, and it is quite versatile.  It pairs wonderfully with Sourdough bread.  A breakfast with a cup of hot Earl Grey Tea and sourdough toast with mango papaya jam is a real treat!

Making jams and jellies is really chemistry 101.  For certain things to happen, there must be a certain ratio of juice, sugar, and pectin, at the right ph.  Without this, the jelly will not set up and remain a syrup!  So, I am astounded that mango and papaya tastes like apricot jam.  Cannot explain how two tropical fruits with a little lime juice and sugar end up tasting like apricots.

Ingredients:  Mango, Papaya, cane sugar, lime juice, pectin.
