Orange Marmalade

I believe it is necessary as a jelly maker to have an Orange Marmalade.  This is probably the most difficult of my flavors to cook, but when  done right, the finished product is a deep amber color with the fully cooked and softened peel attractively suspended in the amber jelly.  It's a balancing act, the temperature needs to be high enough to properly set it without turning it too dark. I have made way too many batches of orange syrup due to not getting this right!

I am a Winnie the Pooh and Christopher Robin fan myself, so I am always surprised when younger customers want to try the marmalade -  more often than not they are fans of Paddington Bear.  Paddington Bear is certainly better dressed than Pooh!

Pairs with:

• Base for Orange Chicken
• Add to a slice of French baguette and butter
