Pineapple Ginger

I wanted to add a Pineapple jam to my line up.  I finally decided to experiment with Ginger.  I am glad that I did, ginger gives an amazing aroma as it’s cooking.  Because of this, it’s one of my favorites to prepare though it’s a tad problematic due to the enzyme bromalin in fresh pineapple – which prevents pectin to activate.  This problem can be overcome by adjusting the cooking procedure slightly by raising the temperature to deactivate the enzyme.

• Grilled shrimp of chicken

Ingredients: Pineapple, Ginger, Cane Sugar, Lemon Juice and Pectin.
