People tell me all the time that my Strawberry Jam is the best they have ever tasted!  Now this makes me scratch my head and wonder – what makes mine better and different?  The ingredients are straight forward – strawberries, sugar and pectin…hmmm?  The answer is the ingredients!  When you read the labels of other strawberry jams, you will find that many substitute apple juice or grape juice in their recipes.  This allows them to stretch and make more product cheaper as these juices act a filler and a source of pectin; it also dilutes the pure strawberry fruit and flavor. Another trick is to use another cheaper sweetener, such as high fructose corn syrup or other substitutes.  My strawberry jam is made with table quality strawberries, cane sugar, and pectin extracted from orange peels at Pacific Pectin, a family-owned company in California specializing in pectin.  The result is a pure unadulterated strawberry flavor.   And of course, the secret ingredient of my small batches is tender loving care.  This is what makes it jelly for the Soul!
